Smashed Tacos
Crispy smashed beef tacos with all the toppings. A van favourite that never fails.

Ingredients
  • 300g beef mince
  • 6 small corn tortillas
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper
  • Shredded cheese, sour cream, salsa, lettuce to serve
  • 1 lime, cut into wedges
Steps
  1. 1Mix mince with cumin, paprika, salt and pepper. Divide into 6 small balls.
  2. 2Heat frypan over high heat. Place a tortilla in the pan, put a mince ball on top and smash flat with a spatula.
  3. 3Cook 3 minutes until crispy underneath, then flip and cook 1 more minute.
  4. 4Top with cheese, sour cream, salsa and lettuce. Squeeze over lime and serve immediately.
Glory tip: Get the pan really hot before you start — that's the key to the crispy bottom. Don't move them once they're down.

  • 1 can (420g) corn kernels, drained
  • 2 eggs
  • 4 tbsp plain flour
  • 1 spring onion, sliced
  • Salt and pepper
  • Olive oil for frying
  • 1 avocado and 1 lime to serve
Steps
  1. 1Mix corn, eggs, flour, spring onion, salt and pepper until combined.
  2. 2Heat a drizzle of oil in the frypan over medium heat.
  3. 3Drop spoonfuls of batter into the pan and flatten slightly. Cook 3 minutes each side until golden.
  4. 4Serve with smashed avocado and a squeeze of lime.
Glory tip: Don't flip too early — wait until the edges look set before turning or they'll fall apart.

  • 300g beef mince
  • 1 tsp garlic powder
  • Salt and pepper
  • 2 handfuls shredded lettuce
  • 1 tomato, diced
  • Shredded cheese, pickles, mustard, ketchup to serve
Steps
  1. 1Season mince with garlic powder, salt and pepper. Cook in frypan over high heat, breaking up as it cooks, for 8 to 10 minutes until browned.
  2. 2Build your bowls — lettuce base, then mince, then tomato and cheese.
  3. 3Top with pickles, mustard and ketchup.
Glory tip: Get the mince really well browned and slightly crispy — don't stir too much, let it sit and develop colour.

  • 2 medium sweet potatoes
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder

Steps
  1. 1Peel sweet potatoes and cut into even chip-sized strips.
  2. 2Toss in olive oil, paprika, garlic powder, salt and pepper until well coated.
  3. 3Place in the air fryer basket in a single layer — don't overcrowd.
  4. 4Air fry at 200°C for 15 to 18 minutes, shaking halfway, until golden and crispy.
Glory tip: Pat the chips dry with a paper towel before tossing in oil for extra crispiness.

  • 4 thick slices sourdough or crusty bread
  • 60g butter, softened
  • 2 garlic cloves, minced or 1 tsp garlic powder
  • Small handful fresh parsley, chopped
  • Salt to taste
Steps
  1. 1Mix softened butter with garlic, parsley and a pinch of salt.
  2. 2Spread generously over one side of each bread slice.
  3. 3Place butter-side up in the air fryer basket.
  4. 4Air fry at 180°C for 4 to 5 minutes until golden and edges are crispy.
Glory tip: Add a sprinkle of parmesan on top before air frying for something extra special.

  • 6 large flat mushrooms
  • 100g cream cheese
  • 2 garlic cloves, minced
  • Small handful fresh herbs (parsley, chives or thyme)
  • 30g parmesan or tasty cheese, grated
  • Salt and pepper
Steps
  1. 1Remove mushroom stems and chop finely.
  2. 2Mix cream cheese with chopped stems, garlic, herbs, salt and pepper.
  3. 3Spoon filling into each mushroom cap and top with grated cheese.
  4. 4Air fry at 180°C for 8 to 10 minutes until mushrooms are tender and cheese is golden.
Glory tip: Swap cream cheese for ricotta if that's what you have in the van fridge — works just as well.

  • 200g halloumi, sliced into 1cm pieces
  • 1 lemon
  • Small handful fresh mint leaves
  • Drizzle of olive oil
  • Cracked black pepper
Steps
  1. 1Heat a drizzle of olive oil in the frypan over medium-high heat.
  2. 2Add halloumi in a single layer. Cook 2 to 3 minutes without moving until golden.
  3. 3Flip and cook the other side for another 2 to 3 minutes.
  4. 4Squeeze over lemon juice, scatter with mint and season with pepper. Serve immediately.
Glory tip: Halloumi goes rubbery if it sits too long — eat it straight from the pan.

  2. 2Add potatoes in a single layer, season well. Cook without stirring for 5 to 7 minutes until golden underneath.
  3. 3Add rosemary and garlic, then flip potatoes.
  4. 4Continue cooking 10 to 12 minutes, turning occasionally, until golden and cooked through.
Glory tip: Resist stirring too early — let them form a crust before you turn them.

  • 2 ripe peaches, halved and stone removed
  • 1 tbsp butter
  • 2 tbsp honey
  • 1 tsp cinnamon
  • 4 tbsp Greek yoghurt
  • Small handful granola (optional)
Steps
  1. 1Heat butter in frypan over medium-high heat until foaming.
  2. 2Place peaches cut-side down and cook 3 minutes without moving until caramelised.
  3. 3Flip, drizzle with honey and sprinkle with cinnamon. Cook 2 to 3 more minutes.
  4. 4Serve warm on Greek yoghurt with a drizzle of pan juices and granola.
Glory tip: Nectarines and plums work just as well as peaches if that's what you find at a roadside stall.

Air Fryer Bread Churros
Crispy cinnamon sugar churros made from bread. Dangerously easy and incredibly good.

  • 4 slices thick white bread, crusts removed
  • 60g butter, melted
  • 80g caster sugar
  • 2 tsp cinnamon
  • Chocolate dipping sauce to serve (optional)
Steps
  1. 1Mix cinnamon and sugar together in a bowl and set aside.
  2. 2Flatten bread slices with a rolling pin or bottle. Cut into strips.
  3. 3Brush strips with melted butter and place in air fryer basket.
  4. 4Air fry at 180°C for 6 to 8 minutes until golden and crispy.
  5. 5While still hot, roll in cinnamon sugar until well coated. Eat immediately.
Glory tip: Great with a Nutella dipping sauce — warm a spoonful in the pan with a splash of milk until smooth.

  • 4 thick slices white or brioche bread
  • 4 tbsp Nutella
  • 2 eggs
  • 3 tbsp milk
  • 1 tbsp butter
  • Icing sugar and strawberries to serve
Steps
  1. 1Spread Nutella on 2 slices of bread and sandwich together with the remaining 2 slices.
  2. 2Whisk eggs and milk together in a shallow bowl.
  3. 3Dip each sandwich in the egg mixture, coating both sides well.
  4. 4Melt butter in frypan over medium heat. Cook 2 to 3 minutes each side until golden.
  5. 5Dust with icing sugar and serve with strawberries.
Glory tip: Brioche bread makes this extra indulgent. Banana slices inside with the Nutella is next level.

S'mores Quesadilla
Melted chocolate and marshmallow in a crispy tortilla. Best eaten immediately.

  • 2 large flour tortillas
  • 80g milk or dark chocolate, broken into pieces
  • 1 cup mini marshmallows
  • 1 tbsp butter
  • Icing sugar to dust (optional)
Steps
  1. 1Scatter chocolate and marshmallows over one half of each tortilla. Fold in half.
  2. 2Melt butter in frypan over medium heat.
  3. 3Cook quesadilla 2 minutes until golden and crispy underneath.
  4. 4Flip carefully and cook 1 to 2 more minutes until golden and filling is melted.
  5. 5Slide onto a plate, dust with icing sugar and cut into wedges.
Glory tip: The filling gets very hot — let it cool for a minute before eating. Add peanut butter inside for something extra.
